Happy Sunday guys! I accidentally took the week off from blogging, but I'm back and starting with my 4th edition of everyday eats! It's been one of those work weeks, forrrr the past couple of weeks? I think that's why I have been craving comfort food. Also, I told y'all last week that I'm stoked for fall food, so it's probably that too. Fall is like the KING of comfort food. Chili, soup, squash, tailgate food, I mean... get it my belly. Also I just want to say that several of these have good leftovers and Nick I love to not have to cook on the weekend, while not spending money out. #winwin

Do y'all have any food requests? Or anything you want me to try that you're afraid to try? Also thinking about themes for different weeks?! That could be really fun. Or even just different cities or countries to focus on and try new things. It sounds fun to me!! Let me know what y'all think.

ALSO I just want to say that it's not a gourmet meal every night. One of the options I shared below is just fish that we like to pick up from Whole Foods. It's easy, healthy and we just don't have to think about it. Also with cooking, a lot of our nights are dirty dishes. I just want to say if it's hard for you to cook dinner every night - it's okay! Part of the reason that I share iPhone pics instead of my nice camera pictures, is because I truly want these to be everyday eats for you. It doesn't have to be fancy to be a nice, home-cooked meal. Just wanted to clear the air, as we live in this instagram vs reality world. BUT I also wanted to say that cooking is fun for me. It's a stress reliever. And that's okay if it's not for you. We all have our things. Bon AppƩtit!

Recipe: Ground Turkey Sweet Potato Skillet

Adaptations: I used a green bell pepper instead of a yellow one. I like the flavor better!

Wine pairing: Burgundy / Pinot Noir

My thoughts: I've made this several times and it is one of those dishes that is really easy and everyone likes it. Sometimes I spice it up and put an egg on top and/or some salsa. Avocado works too!

Any leftovers? Yep! We usually have several more servings  -around 6 total.

Can I make it vegetarian? Use black beans instead of turkey!

Recipe: Whole Foods Crab Stuffed Salmon w/ cous cous and spinach salad

Adaptations: N/A

Wine pairing: Rioja

My thoughts: This is one of our "easy" / "We don't feel like cooking" meals. We split a stuffed salmon from whole foods and add sides.

Nick's Rating: 8.5

Any leftovers? None of the fish, but we for sure didn't eat all the cous cous. 

Can I make it vegetarian? not really.

Recipe: Healthier Poppyseed Chicken

Adaptations: I baked the broccoli before tossing it in the dish. I bake it with olive oil, salt, pepper, and cracked red pepper! I think the flavor is just better. I also used whole wheat flour and reduced fat ritz crackers for the topping.

Wine pairing: White Bordeaux or Sauvignon Blanc

My thoughts: I was craving comfort food and this one fit the bill! It's so yummy but a healthier version. I love whole wheat bread, but I don't always love the substitution in food because it tastes whole wheaty. I didn't even mind it in this dish!

Any leftovers? Yes! Several more meals, because it's a whole casserole. 

Can I make it vegetarian? It would honestly make a great broccoli casserole if you take out the chicken. I also like the flavor of putting it over spinach leaves. YUMMY.

Recipe: Sous Vide Sea Bass w/ long grain wild rice (both from whole foods)

Adaptations: n/a

Wine pairing: Chardonnay

My thoughts: This was our first time using the sous vide on a white fish. Bass is usually more rich, but the sous vide let it keep its flavor.

Any leftovers? I actually didn't finish the fish and for sure didn't finish the rice.

Can I make it vegetarian? Not really.

Recipe: Healthier Tomato Pie

Adaptations: Whole wheat crust using Sally's Baking Addiction crust recipe w/ whole wheat flour

Wine pairing: Cabernet blend or Tempranillo

My thoughts: Did I tell y'all I was craving more comfort food dishes?! This pic was taken right after I took it out of the oven and it actually fogged up my camera. It was so good! I thought about subbing the mayo for greek yogurt, but it's only 1/4 of a cup and I thought it would need the mayo fat.

Any leftovers? Yep! We both had seconds and then Nick probably got two more meals out of it.

Can I make it vegetarian? YES! It is!
