You guyyyys! Happy Sunday!! It’s been awhile *cue Staind* since I have done a EEE post- about a month to be exact! It’s been weird with being out of town and the fact that I’m craving pasta like its my job, buuuut here I am. I thinkkkk this will be my last one of the “regular” Elle’s Everyday Eats posts. I have one cued up for next week about easy foods when I’m in a hurry, but other than that, I think I will bring it back when I feel like it or even just post more regular one off recipes. Recipe: Cook-off Winning Chili
Adaptations: I topped it with greek yogurt and shredded gouda!
Wine pairing: Malbec
My thoughts: Very good! Especially on the chilly/rainy days we have been having. I have my mom’s super thick and tomato-y chili in mind, so I think all others can’t compare!

Any leftovers? yes! It’s better the second day, too!
Can I make it vegetarian? Sure! Just remove the meat.
Recipe: Cheeseburger Lettuce Wraps
Adaptations: I topped the burgers with swiss cheese and also added more “stuff” to the patties, like onion and jalapeno. I also made sweet potato fries!
Wine pairing: Syrah
My thoughts: It’s different from a burger, because no bun, but a great alternative!

Any leftovers? Yes! I made 3 patties, so we had 1 leftover.
Can I make it vegetarian? Grab a veggie or black bean pattie!
Recipe: Beef Stroganoff Casserole
Adaptations: I used my Free to Eat Pasta in this and greek yogurt instead of sour cream.
Wine pairing: GSM such as Cotes du Rhone
My thoughts: My mom alway made beef stroganoff! This was interesting because it had tomato in it! I don’t remember hers having it in there, but this was still really yummy!

Any leftovers? Yep! Casseroles are my fave because of this!
Can I make it vegetarian? Remove the meat?
Recipe: Cranberry BBQ Meatballs
Adaptations: I only made about 15 meatballs, so I tried to make 1/3 of the sauce.
Wine pairing: Sangiovese
My thoughts: I’m not a huge bbq sauce person, but I love lil smokies in a bbq sauce, so I thought I’d like these. They were okay. I’ve made lots of other meatballs that I enjoy more.

Recipe: Spicy Sweet Potato Chicken Bowl
Adaptations: I added goat cheese crumbles on top!
Wine pairing: Cab Franc
My thoughts: Really good and pretty healthy! I really enjoyed this.
