First of all, I can't believe that this series has made it to week 7! I honestly didn't think I was going to do it past week 3, but y'all have continued to love it, so here we go with this week's features. It looks a little different, because I included when I used leftovers for different meals. My biggest initial thought for this series was basically just to let you know that it's possible to cook good food, with easy recipes, that aren'y bland anddd that not every dinner has to be hard or take forever. Ya feel me? BUT this series will eventually end...however,  since I know y'all like recipes now (it wasn't always the case), then I can incorporate them in single posts, with nicer pictures. I recently tried that last Thursday with my Afternoon Tea and Pumpkin Biscuits post. I'm trying to store up as many "extra" recipes as I can, because come end of September, Nick and I will be in Seattle and I want to make sure that I can still post for y'all. Yummy things are coming!!

Recipe: Keto Chicken Parmesan Casserole

(salad is just spinach + balsamic)

(roll is a goat cheese biscuit recipe by Shauna Niequist in her book Bread and Wine )

Adaptations: I used 4 chicken breasts, which didn't equal 5 cups and it was fine. I also went with a tomato basil sauce, to give it more flavor. I mixed everything together before putting it in the dish. I used traditional bread crumbs instead of pork rinds. 

Wine pairing: Merlot

My thoughts: This was easy and yummy!  I love a good red sauce and a good casserole, so best of both worlds!

Nick's Rating: 8.5

Any leftovers? Yes! Nick scarfed it down for lunch.

Can I make it vegetarian?  You can add noodles instead of chicken?

Recipe: Sous Vide Steak with spinach salad and broccoli or a baked potato with greek yogurt and cheese. (We try and buy our meat from Rudolph's in Deep Ellum, but if we can't, we get it from Whole Foods.)

Adaptations: Nick likes to buy extra protein and make it all at once so it's ready for lunches or another dinner. That's what happened here - a brand new meal with already made steak! We made it with the sous vide and just included salt, pepper, olive oil and rosemary.

Wine pairing: Bordeaux or Cabernet Sauvignon 

My thoughts: Yummy and easy. The Sous Vide is really an amazing tool!

Any leftovers? Yep - enough for two more meals.

Can I make it vegetarian? Not really.

Recipe: Sweet and Spicy Korean Meatballs

Adaptations: I used ground turkey.

Wine pairing: Pinot Noir

My thoughts: I love a good meatball - these were great. BUT, I like the Firecracker meatballs I featured back on week 5 better.

Nick's Rating: 9

Any leftovers? Yes! Enough for one more meal.

Can I make it vegetarian? Not really.

Recipe: Sous Vide salmon with spinach salad and broccoli and balsamic and a boiled egg (we just cooked the salmon with olive oil, salt, pepper and rosemary. We usually buy our salmon from Whole Foods.)

Adaptations: n/a

Wine pairing: Burgundy

My thoughts: The actual salad was my favorite thing I made all week! The flavors and everything were just so good

Any leftovers? This was another thing that Nick bought extra so we could make another meal out of it.

Can I make it vegetarian? Not really.

Recipe: Black Bean Tacos with jacket cheese and avocado, plus a fried egg and bacon

Adaptations: n/a

Wine pairing: maybe just have some kombucha? (lol)

My thoughts: I am obsessed with Taco Deli and it's pretty budget friendly, but sometimes I don't want to leave the house. Nick made a breakfast taco too, but with eggs, etc. Tortillas, beans, eggs, etc  -these are all fridge staples and easy for any meal really!

Can I make it vegetarian? My taco was vegetarian!
