Another day, another mealllll! This week I made one of my favorite recipes to date - pumpkin mac and cheese. It’s the yummiest comfort meal and is here just in time for fall. Like seriously, plan to make it next Saturday for the first day of autumn, because it’s that good!

Come Wednesday, Nick and I will be headed to Seattle, but don’t you worry! I’ll have my week 9 ready to go :) Hoping to have some new pumpkin recipes for ya too! Happy eating!!

Recipe: Lamb Basque Stew

Adaptations: I didn’t have time to go to the butcher, so I just grabbed beef instead of lamb.

Wine pairing: Sangiovese

My thoughts: I messed this up not because I changed it to beef, but because I didn’t adjust the cooking time and ended up with overcooked meat. Whoops!

Nick's Rating: 8 (but Nick said if the beef was better it would have been an 8.5 or 9)

Any leftovers? Yes! About 1-2 lunches.

Can I make it vegetarian? Not really.

RecipePumpkin Macaroni and Cheese w/ Roasted Veggies

Adaptations: I used Free To Eat Pasta as my noodles.

Wine pairing: Syrah

My thoughts: SO GOOD. A sweet follower recommended this recipe to me -a fall staple for sure.

Nick's Rating: 9.5

Any leftovers? Yes! About 2-3 lunches.

Can I make it vegetarian? It is!

RecipeHealthy Buffalo Chicken Bowls

Adaptations: I also added some spinach, onion, and jalapeno. ALSO, I cut the recipe in half.

Wine pairing: Pinot Noir or Burgundy

My thoughts: I’m not a huge fan of buffalo flavoring, but Nick likes it!

Nick's Rating: 9

Any leftovers? Yes! About 1-2 lunches.

Can I make it vegetarian? You could probably add buffalo flavoring to chickpeas instead of chicken!

Recipe:  Sous Vide Lamb Shanks + Potato Cakes + Spinach Salad

(Nick made the potato cakes by mixing baked potatoes with flour and seasoning, then frying them up. He served them with goat feta and chives.)

Adaptations: N/A

Wine pairing: Pinot Noir

My thoughts: This was our first time using the sous vide on lamb and it did not disappoint!

Nick's Rating: 9.5

Any leftovers? Nope! There’s not a lot of meat on shanks.

Can I make it vegetarian? Not really.

RecipeSpanish Beans and Tomatoes plus Sausage Meatballs

Adaptations: I didn’t put spinach in it, because wilted spinach is kind of gross to me (lol). I did ad sausage meatballs for something extra though! (1 tube of turkey sausage, 1/2 cup bread crumbs, 1/4 cup parmesan, 2 eggs, salt, pepper, all mixed together. Make meatballs about 1 TBS and bake on 350 for 20ish mintues.)

Wine pairing: Pinot Noir or Malbec

My thoughts: I love red sauce and beans, but have never had them together! This was a SUPER easy meal and was savory and filling.

Any leftovers? Yes! Several servings.

Can I make it vegetarian? It is! I just added sausage for a little extra.

Recipe: Sous Vide Bacon + Eggs (and that “stuff” in my tea is cinnamon)

Adaptations: N/A

Wine pairing: N/A

My thoughts: Just wanted to share our experience with sous vide BACON! It takes 6 hours to do, but so yummy. We bought thick cut bacon from our butcher and just went from there. It cooks like pork belly, then you sear it afterwards. (Like most sous vide protein)

Nick's Rating: 9

Any leftovers? Yes, Nick made Bacon for the whole week! He freshly seared them each morning.

Can I make it vegetarian? Not really.

Recipe: I followed the instructions for the orange knot recipe but made my pumpkin biscuit recipe instead.

Biscuit dough -

  • 2 Cups of flour (I used 1 C whole wheat and 1 C unbleached white)

  • 3 tsp baking powder

  • 2 tsp salt

  • 3 tsp pumpkin spice

  • 3/4 cup plain yogurt (I used greek yogurt)

  • 1/4 cup + 4 TBS pumpkin puree

  • 4 TBS Butter

Adaptations: You can use store bought biscuits, but I made my own!

Wine pairing: N/A

My thoughts: Super good! Cook 9-10 minutes. I did 8 minutes and I wished they were slightly more done, but taste like an easy orange danish roll!
