This Thanksgiving season Nick and I hosted our first Friendsgiving! We've been in our apartment for a year now, but our place was no where near people ready last year. It feels so good to get all of our boxes off the floor and fill the rooms with friends and food.
This particular Friendsgiving, about half of us were pescatarians, so it just didn't make sense to spend the time and money roasting a big piece of meat. We also considered fish, buuuuut that can get expensive! I did some research and found a recipe for sweet potato gnocchi! It was savory, had all of the yummiest thanksgiving flavors, and you don't even miss meat! I know that our world is beginning to be more plant based minded, so I figured I'd write out our menu, so you'd know it's possible! I think people's biggest hurdle with the thought of vegetarianism is that they are missing out on yummy food and amazing flavors. BUT this is simply not the case. Don't believe me?

Sweet Potato Gnocchi with Balsamic-Sage Brown Butter

Is your mouth watering yet?! Don't get me wrong - I love a good burger as much as the next guy, but quite frankly, I don't need meat. Plus, it's more about who's around the table than what is on it. I hope you have the best Thanksgiving yet!
