As y'all may or may not know, Nick and I got married in late October, went on our honeymoon, then he moved in when we got back. He had been living in his place for over 3 years about that time and never cleaned it out before...let me just tell you - we took more trips to the dumpster than to the new apartment and still aren't completely moved in. BUT I feel like we are finally in a place where we can do things and have people over. There was  time when it wasn't worth our energy (or time!!) to cook dinner, which sucks, because we love to cook! Seeing as we have the time an space to do so now, I have made sure to take advantage of it. We do have busy weeks in general and certain planned meals, so I try to designate one night (usually Monday) to cooking in! Lately, I have been on a HUGE casserole kick. I love casseroles for their ease of making, filling-ness, and the fact that I can take leftovers to work for lunch; however traditional casseroles are typically filled with not so great stuff for you. I have been on the hunt for healthier dishes that are just as filling and yummy, but better for you! I have tested and tried all recipes, plus they are husband approved!

Unstuffed Cabbage Casserole: My favorite part of this casserole was the cayenne pepper sprinkled on top of it - the seasoning gave it the perfect kick!! My least favorite part was the rice. I would suggest cooking it through beforehand. I couldn't get it to cook all the way through, so it was kind of crunchy...but good though! I am not sure what I was expecting, because I don't know that I have ever had a cabbage roll, but it was really good! I would for sure make it again.

Chicken and Wild Rice Casserole: I think this is my favorite as-is recipe. The butternut squash definitely makes it!! Wild rice is also one of my favorite rices, so it is kind of just a wonderful marriage of flavors!

Spinach and Artichoke Quinoa Bake: This is the dish that can change your opinion of quinoa if it has a bad rap in your brain. This dish is so savory and yummy!! I actually added chicken to make it have more protein, but you don't need if it you want to keep it vegetarian friendly. 

Pesto Broccoli sweet Potato Rice Casserole:  Honestly let me just say PESTO and drop the mic. Pesto can do amazing things, even make me like broccoli, which I typically don't enjoy. I also love sweet potato baked like this (not a traditional potato casserole), so that really makes it!

Winter Kale Sausage and butternut Squash Lasagna: Butternut squash is so underrated. I adore the flavor, especially with something like kale! I also don't really like to eat pasta unless it is homemade, so I love a lasagna that doesn't use the traditional noodles!

Cheesy Chicken and Broccoli Cauliflower Rice Casserole: This is what you see pictures of! We really liked this dish. Cauliflower is the new kale, I'm telling you! I've bad cauliflower "baked potato" soup and cauliflower fried race and they are so good!! I would make this again, but probably add more salt, pepper, and chicken.

I would make and enjoy ALL of these casseroles again, so don't hesitate to make one! They are just easy and effective :) Do you have  favorite "healthier" casserole? Let me know!
